Motorcycles & turning

Leaning causes there to be no torque on the contact point of the tires to keep the wheels from coming out from under you.

What keeps the bike from falling over when making a sharp turn (leaning over)?

Physics. Basically, the bike wants to keep going straight. You lean the bike over to make it turn and the bite of the tires long with the weight distribution of the rider on the bike keeps it from sliding out from under you while you make the turn.

Don't even get into counter steering.
