On a normal bike for downshift just press down the gearshif lever.
(there are some race bike with inverted gearshift lever but are used only for racing not on the road)

I dont know what is a "HUD" but there is no need to know the "number" of the gear.
You can feel directly if the gear is too low or too high.

Uhh... look at the other side of it. A lot of motorcycles don't like to be shifted unless they are moving. If you've ever found yourself stopped in third gear on a bike, you probably know what I'm talking about. You sit there like a fool and can't get it shifted into 1st. Shift down the same way you shift up - keeping it in the rpm band.
