It is the state form of an amino acid. You consume glutamic acid every day.

glutamic acid != free glutamic acid(msg)

I get very bad headaches after eating MSG, and am sensitive to other foods containing preservatives and other nitrates. Many people have these problems, and there's an extensive list of triggers for migraine sufferers..including caffeine, alcohol, nicotine, chocolate, cheeses, perfumes/colognes, and pizza...
