my mom told me once that the deal with MSG is that its not harmful in anyway, but some people have alergic reactions to it.

so I wikipedia'd it and the stuff they say on there is pretty confusing...



so...what's the facts: is it unhealthy for everyone, like trans fats or whatever, OR is it just something that causes alergic reactions for some people, like peanuts?

MSG is not a toxin. It is a sodium salt of glutamic acid, which disassociates into sodium and glutamate ions in solution.

Sodium obviously isn't harmful (barring high blood pressure), and Glutamate is simply a naturally occurring amino acid.

Some bad reactions to it are caused by allergies, but others are similar to lactose intolerance.
 
billions of chinese people eat. some people have adverse reactions but ive ate it all my life and seem ok

When a claim is made that one substance can cause/affect 32 illnesses/ailments, I'd take it with a huuuuuuge grain of MSG.
 
A friend of mine gets terrible headaches after eating at this one Mongolian place. Thats the only instance where I've heard of someone having a reaction to MSG. Hell, in that case, it may not even be the MSG, but a reaction to something they might put in their food.

i think he's just making the distinction that an allergen has to induce an allergic reaction via histamines while toxins simply create adverse effects on the body
 
So....does it cause cancer? That's all I'm worried about. Otherwise, I'm gonna finish this bag of chips right now. 😀
 
I have read that msg exposed to high temperatures (> a couple of hundred C) creates carcinogen. this is why in stir fries you shouldn't add the MSG too early. otherwise though it is completely safe unless you have some kind of sensitivity to it. I've never experienced any problem with MSG.

MSG makes my nose itch for hours, and makes me tired to boot, so I go out of my way to avoid it whenever possible.

It is the state form of an amino acid. You consume glutamic acid every day.
 
Lola is sensitive to MSG. It causes her migraines. It's doesn't occur in natural foods, though. But canned soups, Chinese food, pretty much all frozen stuff (except the all naturals), hot dogs, even injected chicken, is all off limits. It's not a huge deal, you just have to remember to look at the side of the box.
