Well as brianlee and brblx have mentioned there is
exact comparison with 2x 19" monitors. You can always get a nice 30" LCD monitor and it might equal the combined resolution of the 19" monitors. With that in mind you would be better off going with some bigger monitors (i.e. 21" and up). I personally use 2x 22" Acer monitors for school work and personal projects.
Also, how do you know if you will exceed the maximum output of the on board video of most newer motherboards?
It's a little difficult to answer this question as it is subjective to personal preferences. Most motherboards nowadays don't have integrated video (unless you specific buy a motherboard with integrated video), but if you have a discrete videocard with two display outputs, usually it would be:
The number of Videocard Slots (on the mobo) x Maximum Resolution Per Slot(i.e. 2560 x 1600) x Number of Video Output connectors.
However trying to play videogames with multiple monitors at a high resolution can have a significant impact on the frame rate.
