I meet people from the internet on a regular basis, too...I just have ground rules:

1. I have to have talked to them on the phone more than once or twice
2. I ONLY meet them in a public place - restaurant, bar, airport, etc
3. I ALWAYS make sure they know that I'm not getting together for any reason other than strictly friendship/hanging out. If that changes at some point, fine, but that's how it starts out and until further notice that's the way it is.
4. I never drink more than a couple drinks - i.e. make sure I have my wits about me so I don't do anything stupid, and
5. I never leave my drink alone

I've never had anything bad happen and have made some really good friends...even dated a couple people...

;)

I would recommend just getting a bite to eat first and then playing chess on a second date. Tell him that something has come up and make an excuse that you have an interview or appointment tomorrow morning and you can't stay up late and play chess. There shouldn't be any rush to play chess, and if he's a cool guy, then he'll understand and YOU'LL wanna see eachother for a second date.

another vote for starbucks. In nyc, there are hundreds of these coffee shops, so it's easy to find relatively empty shops which provide both comfortable settings, privacy, and chess sets :). I prefer the neutral setting as well (I just like the social dynamic).
