Mobos & DDR2 RAM 1066 vs. 1200

I'm researching hardware for my new gaming rig.

I'm looking at the following GENERIC configuration. I say generic because I'm not sure of exactly what components I'm going to get, just the basic specs. Budget for just the tower will be about $5000 CDN

Intel QX6800 Quad-Core Extreme Processor
nVidia 680i Chipset, SLI Mobo
4 GB RAM
2 x 8800 GTX OC2 Video card (SLi)

I was looking at the OCZ SLi-Ready RAM that clocks in at 1066 MHz. However, I'm having issues finding a motherboard that supports specifically 1066 MHz RAM clock speeds. I am finding a lot of Mobos that have 800 MHz and 1200MHz clock speeds, but can't find any that support a 1066MHz clock speed.

My question is this:
If I were to purchase a Mobo that supports 1200 MHz RAM, would the Mobo slow down to 800 MHz or 1066 MHz RAM if I used the OCZ SLI RAM?
