Mmmkay, big barbie planned for tomorrow arvo, any suggestions for a marinade for some fat exmouth tiger prawns?

How does the marinade sound? Any other suggestions?

Will of course also be cooking bulk bacon, an important ingredient any any successful barbie 😉

Prawns, bacon, beer, a beautiful summer's day, a river to dangle one's legs in while consuming said beer, probably play some cricket, how could I go wrong?

Location of said barbie, drop on by if you're in the area from about 2:30pm tomorrow and I'll shout you a tinnie or two 😉

Give a guy 2 weeks notice......... I would have hopped a A380 out of San Fran to Sydney ....... then took the Indian Pacific to Perth. 🙁

cook the prawns in the shell

heat the marinade, add some rosemary

ice the prawns to stop the cooking, and let the oil cool
marinate cooked prawns in the olive oil, serve at room temp. preferably with some bread or something to sop up the oil. super good stuff.

While that sounds superb, you have to take into account the 6 pack or so of full strength I intend to consume at a bare minimum before even thinking about firing up the barbie, and the limited resources available down at the river foreshore 😉

I think I'll save that for another day, sounds like an awesome starter for a dinner party :beer:

Due to some unforseen circumstances (namely about half the participants getting sh1t-faced last night and being too unwell to attend), it has been postponed until tomorrow 🙁

Better half and myself had a somewhat quieter barbie at home, prawns, bacon, and shark all washed down with a nice sem sav blanc and some pale ale...I am kicking on at this stage 😀

For what it's worth, the prawn marinade was superb; nice tart citrus taste when you bite into them that quickly fades into rich prawn taste and finishes with a bite of chilli. Perfection :beer:

In this instance, I think my marinade meets that definition, it's an acidic solution (the lemon juice) used to flavour and tenderise the prawns (I left them sitting in the marinade for about an hour before cooking). I didn't add anything after cooking 🙂
 
Ah, in that case our definitions match.

Here's the cocktail sauce:

1 (14 1/2-ounce) can diced tomatoes, drained
1/2 cup prepared chili sauce
4 tablespoons prepared horseradish
1 teaspoon sugar
Few grinds fresh black pepper
1/2 teaspoon kosher salt
1 tablespoon olive oil
Sprinkle Old Bay seasoning

Put all of the above into a food processor and process until smooth.

Oh, shrimp benefit from a brine, too, so add a bit of salt to the marinade.
