Had a craving for mushrooms tonight, so we whipped up some portobello burgers.
Shrooms were marinated in balsamic vineger, crushed garlic, red pepper, olive oil and creole mustard. On sesame brioche rolls with avocado, lettuce, tomato, onion, cheddar, and balsamic/mayo spread. Plus a salad with fresh ginger dressing and couscous with dried cranberries, apricots and golden raisins. Washed down with a nice glass of merlot. Delicious! Now I'm wishing I had made more so we'd have some leftovers...:(

It sounds good, but I don't know if I could handle a mushroom burger.. Not a big fan of mushrooms.

Unless they're the kind that contain C12H17N2O4P. ;)

portobella's rule! closest thing to steak without it being steak.

I'll post it here in case anyone else wants to try:
Portobello burgers (for 2):
3 large portobello caps

Marinade:
1/2 cup balsamic vineger
3 cloves garlic, crushed
1/4 cup olive oil
crushed red pepper (spice, not vegetable)
salt
fresh ground pepper
1 tbsp creole or other whole-grain mustard

dressings:
lettuce
tomato
avocado
red onion
cheddar
mayo
2 brioche hamburger buns

Cut off stems and gills of shrooms, wash well and dry on paper towels
Mix all marinade ingredients in ziplock bag, shake well, add shrooms.
Let sit at room temp for 30 minutes or so.

Slice tomatoes, onions, cheese, avocado, shred lettuce.

Heat pan on medium high, add shrooms (don't get marinade into pan or it will burn)
Cook 3 minutes or so on each side...I honestly didn't pay attention, it's hard to mess up though!

Add some of the marinade to mayo, mix until it's tan in color.

Slice and toast buns.

Use 1 and a half shrooms per sandwich.

Assemble and enjoy!


Couscous was from the store across the street, it's amazing. I can give you the ingredients though:
couscous, golden raisins, dried apricots, dried cranberries, chives, red pepper (the veggie, not the spice), olive oil, orange juice, salt.


Salad was just shredded romaine, diced tomatoes, shredded carrot and ginger dressing (also from store), just like japanese restaurants' house salad!
