The recipe is for one taco, so you have to double what I posted for two.
I also added a little Emeril's Southwest seasoning and two teaspoons of Alabama Hot Sauce to the meat while it was cooking. No need to drain the meat, either, because it has so little fat there is no grease to speak of once it is cooked. If you are watching your sodium you might have to watch the Emeril's seasoning. I added a little salt and pepper, too.
