I have a KT7A v1.2 mobo, and I my RAM is a single Kingston 256MB PC133 ECC CL3 stick.

Now let's say I want to upgrade to 512MB. Obviously getting an another, identical stick would be ideal, but could I just get a generic PC133 256MB DIMM, or would my system become unstable? Does the ECC memory fall back to non-ECC when mixed with normal memory?

Yeah, you've answered your own question. If you want to keep the extra stability offered by ECC buy more ECC but, yes, you can put in a regular stick and it'll run fine, just without the ECC function working.
