We have had an iPad for a while and just picked up a new Apple TV to compare it to the Roku and see how well the AirPlay works. So far we are enjoying it and the wife would like to ditch our roku and get another AppleTV.

How would AirPlay work with 2 Apple tvs and 1 ipad?

Will the iPad broadcast simultaneously to both Apple Tvs or just the one it is nearest?

Also if we get a second iPad will there be a problem if I AirPlay to one Apple Tv and her to the other?

You can name each AppleTV uniquely, so when you go to AirPlay something, you just pick which one you want to stream it to. It connects through your wifi network, it doesn't establish a direct connection between the devices.

You can also be streaming something from your iPad, and your wife can take it over with her iPad.
 
You can only broadcast to one AppleTV from one device at a time. You can broadcast between different devices and different AppleTVs no problem.
