Absolute bare minimum installation requirements:
Network connection/floppy/CDROM etc MAY be required depending upon your chosen method of installation.
Windows 98:
486DX 66MHz
16MB RAM
120MB to 295MB HDD depending on file system and chosen installation options.
VGA compatible graphics card
Windows 2000-Professional
64MB RAM..... (It CAN be installed with 32MB of RAM, and the installation WILL continue but it is not supported by Microsoft)
Pentium 133MHz
2GB HDD, with 650MB free.
VGA Compatible graphics card.
Windows 2000-Server
128MB RAM.... (It CAN be installed with 64MB of RAM, and the installation WILL continue but it is not supported by Microsoft)
Pentium 133MHz
2GB HDD, with 1GB free.

For Win2K (all versions, and XP Pro):
Installation can be performed on a dumb client over a network with considerably lower requirements.
As an example, I've installed Win2k Pro on a 486DX 66MHz w/16MB of RAM on a dumb client to remotely run Win2K from another machine.
That's strictly for a corporate network though and is not applicable for use in a home envronment nor if the machine ever needs to be directly accessed.
