Migrating from Raid0 HDD to SSD on Asus P6T

My current setup is as follows:

Asus P6T
2x WD Caviar Black WD1001FALS 1TB 7200 RPM SATA 3.0Gb/s in Raid 0
1x WD Caviar Black WD1001FALS 1TB 7200 RPM SATA 3.0Gb/s

I have 2 partitions on the raid 0 setup and 1 partition for the other drive. One partition on the Raid 0 setup is for OS and one is for data.

I recently purchased the Mushkin Enhanced Callisto Deluxe MKNSSDCL120GB-DX 2.5" 120GB SATA II as an OS / software drive.

Post SSD installation, I'd like to have 3 partitions:
1 partition on the SSD
1 partition on Raid 0 (HDD)
1 partition on other HDD

Are there any things I need to consider during this update process? I was just planning on installing the SSD, reinstalling windows on the SSD, and deleting the OS partition on the old Raid 0 setup.

Also, does anyone have a good check list for backing up my data on the old OS boot partition?

Thanks,
Ryan
