I'm from Ky so I'm a little bit further south than Illinois, but we sometimes get lumped into the south and sometimes get lumped in with Indiana/Ohio. What part of Illinois are you in(chicago or southern)?
We have a pretty traditional Thanksgiving in my family, turkey, ham, sweet potatoes, cranberry sauce etc. I know two kentucky dishes that aren't necessarily Thanksgiving related are burgoo and hot browns, I imagine Illinois has to have some local dish.

I was born and raised in Louisville, my Mother was born and rasied in Hazard Ky and my father was born and raised in Paducah, I've never heard of either of those dishes.
As far as a traditional IL dish, I would say mostaccioli... I've lived in Chicago for 12 years and it's pretty ubiquitous....

Sorry you missed out on these tasty dishes, as I said they aren't thanksgiving dishes but they are kentucky dishes. Look for them next time you are in the area, you can usually find a Hot Brown at a nice restaurant, but burgoo you won't see as often.
