Mexican street corn in the US

I wondered what Mexican street corn was.
Google says roasted corn off the cob with sour cream, chili powder, and lime sauce.

i guess it's just marketing in this case.
the package could have said: chicken, cheeses, roasted corn, sour cream, chili powder, and lime juice.
but wouldnt portray the concept of Mexican Street Flautas as well

The last batch of these we got were not great. These used to be awesome. Quick microwave for a snack or a few for a meal. The beans were not well cooked the last couple of times we got them so they seemed gritty. I will try the air fryer on a few to see if it fixes them.

Mexican street corn is a real thing, although in Mexico they just call it elotes. I think the idea they had here is that elotes has a very distinct flavor/representation, so calling it that you immediately know what the flavor should be.

Costco here has been selling street corn in bags that are delicious. I'm not sure if they still have it.

The beans were not well cooked the last couple of times we got them so they seemed gritty.
Sounds like a combination of lower moisture content when cooked, maybe paired with freezer burn. If beans aren't hydrated enough when frozen, they tend to crumble apart. That's why you see many of the frozen things with beans come in a solid block of sauce with beans in the middle...the freezer only takes moisture off the outside of the block instead of the bean itself.

I'm annoyed enough when they sell street corn in restaurants....especially when the bathroom clearly has that sign that says, "Employees must wash hands before returning to work".

It's Mexico's attempt at creating premium produce, like Kopi Luwak. So they feed corn on the cobs to mules and then filter through their dung collected from the streets for semi digested corn. Thus street corn.

Im America the streets are paved with gold, in Mexico they are paved with corn. Street corn.
