Memory with new build

Buliding a new system shortly, what memory do you recommend? I will not be overclocking. I mainly game, do office apps, photo editing and tv/itunes.

I will be getting a Intel e6600 and a Asus P5W DH which states that the memory requirements are DDR 800

I already have 2 X 1 gig of Corsair DDR675 ram in my old system.

My question is will I be ok with the DDR 675 or do I need to purchase the DDR 800?

Additionally if I wanted to add 2 x 512 Meg to the other channel would that work or would it hurt performence?

I will be running Win XP or Vista Home Premium.
