Question Memory Upgrade for x58

I was hoping to replace my current PC with a new one, but that may not happen. So now I'm looking for a potential upgrade. My biggest issue seems to be maxing out my RAM. Here are the specs from my 2009 PC:

i7-920 @2.66GHz (may look into overclocking)
6GB DDR3-1333 (3x2GB)
MSI x58 Pro
GTX 1060 6GB
120GB Samsung 850 EVO SSD (Boot drive)
WD 1TB HDD for Photos
WD 750GB HDD for Games

I'm new into gaming, and just getting into PC gaming. I'm a 40 year old father of 2 and my kids got me playing Fortnite with them. Eventually I'd like to try my hand at some other games as well. My current system does OK with Fortnite, but if I have anything else open the 6GB of RAM is maxed out. What's the best way to upgrade the memory in this system? There are 3 more slots available. Should I get 3 more 2GB sticks for the other slots? Should I scrap the triple channel route and just go dual channel with 2x8GB sticks? I don't want to spend much on this system, it is almost 11 years old, but if I can upgrade the RAM and get a little more use out of it that would be great.

I would go with an additional 3x4GB in the remaining slots, and look into a CPU upgrade in the form of a used 6 core Xeon like the X5660. They can be had on ebay and such for under $20.
