you'll get better performance out of faster memory, as long as you're leaving FSB and memory clocks in sync. you can just go to 200 and start playing with the multiplier, and you can oc the processor just as high, but you won't get quite the total system performance since your memory isn't running as fast
If you only plan on having 512MB of ram, always, get 2x256. But, if you have plans on having 1GB of ram, one 512MB stick definitely won't destroy your performance, especially if you get good, low-latency ram.
