If you get 2 sticks and one goes bad, you're still up and running. If you want to add more memory in the future and you only have 2 dimm slots, then go with 1 512 stick. I run 512M in all my systems. 2 x 256.
One stick is generally better. OCing issues are sometimes fewer, as has been said, plus you'll have another slot for future needs. Only disadvantage is price -- 512 sticks are always higher.
