Meatloaf and creamed corn for an awesome dinner

I made a fantastic meatloaf and heated up some creamed corn.

I just love creamed corn. It goes perfectly with the meatloaf.

I will also have a salad and for dessert some mixed berry frozen yogurt.

Meat loaf + creamed corn + fried potatoes(with onions) = win

Don't forget to put catchup on your potatoes and meat loaf. ;)

I love meat loaf. I don't make it too often, though. I'm not sure why.

I love fried potatoes with onions too, but I've never been able to figure out how my mom did it. My fried potatoes don't maintain their structure very well and I end up with a lot of extra mushy mashed potatoes. Any hints?

I love fried potatoes with onions too, but I've never been able to figure out how my mom did it. My fried potatoes don't maintain their structure very well and I end up with a lot of extra mushy mashed potatoes. Any hints?
when I make fried potatoes and onions, I boil the potatoes first and let them cool. I cut them up into bite sized portions. I then cut up my onions and start cooking them first. When they are soft I add the potatoes and garlic, salt and pepper. After about 10 mins or so they are ready to eat.

Sounds awesome. Add some early peas and some bread and you have the perfect meal.

Except replace the creamed corn with mashed potatoes. And I LOVE creamed corn.

;)

I was thinking perhaps add some buttered broccoli. Now that I think about it meatloaf is something I enjoy to eat but I've never made it. Guess it never comes to mind for some reason, perhaps I shall remedy that soon :)

I am low on veggies. No potatoes either.

I did have some bread though. Now its time for a bowl of salad.

I haven't had creamed corn in 3 years. I really missed it.

for anyone who is interested, here is my meatloaf recipe:

2 lbs lean ground beef
4 tbl spoons of Worcestershire sauce
5 tbl spoons of ketchup
1 packet of Lipton's Onion Soup mix

mixed really well and baked at 350 for 60 - 70 mins.

makes a really juicy, tasty meatloaf.

I've met Meatloaf, and there's not enough creamed corn in Dixie to make him appetizing...



...and your meatloaf recipe needs black pepper and bread crumbs.

I forgot to say I did add a bunch of Italian bread crumbs.
