Meat

Notably missing pork roll (as already mentioned by honorable Jerseyan dnetmhz) and SCRAPPLE. But I think bacon is my tried and true favorite.
 
Out of desperation, since there's almost nothing left in the fridge, I tried something.

Leftover breaded chicken cutlets(cut the thickest one I can find legthwise to use in place of bread)
Fry up my last 3 piece of bacon
open up that old can of tuna on the top shelf
dice up that quarter onion for the tuna
add the juice from that half lemon from last week
chill the tuna a bit
layer it in between the slices of the slightly warm cutlet, then add the bacon
Grab a couple slices of cheese from that sandwich that looks stale & plop it on top of everything

conclusion: not bad 🙂
Probably a real recipe for it somewhere.
