MB Temp and CPU Fan Speed

Using PC probe, my MB temp is at 49-51. What is the normal temp? I did peel off the think plastic covering the heatsink thing.

I have stock fan on the CPU. What is the normal speed? Should change it to a specific speed from the bios? or should I let the bios control it automatically?
