Maxtor "One Touch" External Harddrives

I need to come up with an external C: backup solution for a few PCs here in the office. The easier the better.

Was initially looking at an external drive and Norton ghost or something similar to back up the C: drive (OS included) on a monthly basis and have it taken offsite.

Now I see these Maxtor One Touch drives, but I cant see if the "One Touch" option only backs up specified dirs or can it image then entire C drive?

Anyone have experience with these or any other external backup setups?

I think the included software can image the entire hard drive if needed.
