I'm sure there are some insanely expensive matte black paints that don't require insane amounts of attention, but for the most part, it's going to be a lot of work

Any matte finish is going to hold even more dirt that a regular gloss finish because it's not going to be as flat as gloss finish in order to give you that matte look. If it's a "weekend" car it may be worth the trouble. If it's a DD it's going to be a PIA.
