I think that one thing that this forum is missing, is a Matt Witheiler Recipe forum. Thus, to fill this void, I think now is a good time to start one. In this forum, we should all share our favorite recipes that Matt Witheiler has either created, or eaten.
Here is recipe number 1:
Matt Witheiler's Chicken Parmesan "Or Chicken Parmheiler"
Ingredients:
4 Boneless chicken breasts
1 egg, slightly beaten
1/2 cup bread crumbs
1 3/4 cup spaghetti sauce
1/2 cup shredded mozzerella cheese
1 tb grated parmesan cheese
3 cups chopped fresh parsley
Using palm of Matt Witheilers hand, flatten chicken to even thickness. Feel free to mold chicken into the shape of Matt Witheiler if so desired. Dip chicken in egg, then into crumbs to coat. In skillet over medium heat, in hot margarine, brown chicken on both sides. Add Sauce. Reduce heat. Cover, simmer 10 minutes. Sprinkle with all manner of cheeses and parsley. Coverm summer 5 minutes or until cheese melts.
Makes 4 servings.
