Matrox will probably be better for 2D. The Quadro NVS series is not as bad as the Geforce series as far as 2D is concerned since the Quadro NVS series is made by NVIDIA. But the Matrox is still a little bit better for analog. Digital should be the same. The NVIDIA drivers provide the most utilities for multimonitor use. That is why they are the most commonly used card for day traders. Both are great cards though.

If you're doing CAD/3D Studio/3D rendering, then the Quadro will most definately be faster. In 2D you won't notice a difference aside from the image quality; the Matrox cards are unmatched in 2D image quality on an analog VGA output.

I'm not sure how much of an impact a single RAMDAC will have, but I'm pretty sure it's very important to have two of them for a dual monitor setup.

EDIT:
Support for multiple displays (various configurations of VGA and DVI-I) - enhanced multi-display productivity is powered by dual RAMDACs and NVIDIA's patented nView multi-display software.

So it does have dual RAMDAC's after all. :)
