Making this for the girlfriend tonight. Think it sounds good?

Herbed Artichoke Chicken

Ingredients:
1 1/2 skinless, boneless chicken breasts
1 14-oz can tomatoes, drained and diced
1 14-oz can artichoke hearts in water, drained
1 small onions, chopped
1/2 cup kalamata olives, pitted and sliced
1 cup nonfat chicken broth
1/4 cup dry white wine
3 Tbs quick cooking tapioca
2 tsp curry powder
1 Tbs fresh Italian parsley, chopped
1 tsp dried sweet basil
1 tsp dried thyme leaves
1/2 tsp salt
1/2 tsp black pepper
 
The tapioca and curry seem a little out of place in that recipe, and I would probably opt for artichoke hearts packed in oil (unless she is on a diet).

Other than that it sounds pretty decent.

She cooked last night and is away at campus all day today, so I figured I'd suprise here with dinner. Now I just need to figure out what kind of sauce to have with the pasta that I am combining with the chicken.
 
i happen to love artichoke and chiken, so go for it.

leave out the olives though, olives are only good by themselves and with martinis, they ruin anything else.
 
I think my girlfriend and I are going to have Subway for dinner tonight.. 😛
