I don't measure this kind of stuff:

Garlic powder
Onion powder
Ground cayenne
Paprika
Ground black pepper
Kosher salt
Some Adolph's
A little MSG

That usually gets me started and then I'll adjust/tweak it until it looks & smells good.

whatever you decide to make, triple it and save it in an airtight jar, they save for months. Add some cumin to it for a nice southwestern flavor, a little cumin goes a long way, btw.

3/4 cup brown sugar
1/2 cup paprika
1 tablespoon black pepper
1 tablespoon salt
1 tablespoon chili powder
3/4 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon cayenne

This is considered a Kansas City-style rub. Basically, I found a recipe and tweaked it over a few meals to how I like it.
Remove the membrane on the back of the ribs, rub them and let them sit overnight.

Cook them low and slow....anywhere from 250-300 degrees for about 3 hrs.
Put the sauce on the last 30 minutes.
They're done when you pick up one end and they fall apart.

I just made ribs the other day. I like the Kansas City way. Used a similar recipe as Pacfanweb except not as much pepper i add a little cinnamon as well (not alot just a few sprinkles). Put them on the grill but not directly over the flame(turned the top burners on low and put the ribs on the lower part of the grill). Cooked for about 4 hours. Put on the BBq sauce when they were off the grill. They weren't falling off the bone but were moist and not tough. If you want falling off the bone then you gotta bake them first.

I've found that if you want fall off the bone, delicious ribs - you have to smoke them low and slow. no baking, no boiling, none of that stuff. just smoke at 225.

Heheheheh

Actually that recipe is pretty standard. I drop the bay leaf though and add some thyme and garlic.

Also, soak the ribs in a brine with 1/2 cup sugar 1/2 cup salt 1/2 cup vinagar before adding the rub for about an hour. That'll work nicely.

I dont' care for dry rubs though. I like to mix the seasonings with olive oil, then let it soak. The oil breaks down the fibers while cooking and prevents burning.
