As of right now this is what I am going to try and make (although I am going to use vanilla extract instead of vanilla beans). Anyone make ice cream and have any better ideas?

We are also making Sriracha and honey hot wings.

I don't have a specific recipe, but I had craft made ginger ice cream once, and it's unbelievably good. The pepperiness of the ginger makes a nice contrast to the cool ice cream.

This is the recipe I like, uses cornstarch, didn't think it would matter till I tried it, it and cream cheese make the difference. Makes it much smoother.

2 cups whole milk
1 tablespoon plus 1 teaspoon cornstarch
1 1/2 ounces cream cheese, softened (3 tablespoons)
1 1/4 cups heavy cream
2/3 cup sugar
1 1/2 tablespoons light corn syrup
1 vanilla bean, split and seeds scraped
1/8 teaspoon kosher salt

DIRECTIONS
Fill a large bowl with ice water.
In a small bowl, mix 2 tablespoons of the milk with the cornstarch.
In another large bowl, whisk the cream cheese until smooth.
In a large saucepan, combine the remaining milk with the heavy cream, sugar, corn syrup and vanilla bean and seeds.
Bring the milk mixture to a boil and cook over moderate heat until the sugar dissolves and the vanilla flavors the milk, about 4 minutes.
Off the heat, gradually whisk in the cornstarch mixture.
Return to a boil and cook over moderately high heat until the mixture is slightly thickened, about 1 minute.
Gradually whisk the hot milk mixture into the cream cheese until smooth.
Whisk in the salt. Set the bowl in the ice water bath and let stand, stirring occasionally, until cold, about 20 minutes.
Strain the ice cream base into an ice cream maker and freeze according to the manufacturer’s instructions. Pack the ice cream into a plastic container.
Press a sheet of plastic wrap directly onto the surface of the ice cream and close with an airtight lid.
Freeze the vanilla ice cream until firm, about 4 hours.

That's the same recipe as the Ben & Jerry French Vanilla. Use 2 teaspoon of vanilla extract. If you like Ben and Jerry vanilla, you can't go wrong.

I like Ben & Jerry Cherry Garcia. Made it numerous times and it's the same as the store bought one.

Ben & Jerry's Cherry Garcia Ice Cream Recipe(Makes grateful 1 quart)
Ben & Jerry - "A couple of Dead Heads in Maine sent us a postcard with a name for a new flavor. They left the recipe up to us. We got to work with some fresh bing cherries and threw in the chocolate flakes as a last minute inspiration. At last report, both Jerry Garcia and his wife Carolyn are crazy about it."

Ingredients

1/4 cup shaved plain chocolate (B&J prefer Hershey's Special Dark Chocolate candy bars)
1/4 cup fresh Bing cherries, halved and pitted (you may use canned cherries, but see sure to drain the syrup)
2 large eggs
3/4 cup sugar
2 cups heavy or whipping cream
1 cup milk

Method
  1. Place the shaved chocolate flakes and the cherries in separate bowls. Cover and refrigerate.
  2. Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes. Whish in the sugar, a little at a time, then continue whisking until completely blended, about 1 minute more. Pour in the cream and milk and whisk to blend.
  3. Transfer the mixture to an ice cream maker and freeze following the manufacturer's instructions.
  4. After the ice cream stiffen (about 2 minutes before it is done), add the chocolate and the cherries, then continue freezing until the ice cream is ready.

I second the Alton Brown vanilla bean recipe. I bought an ice cream churn specifically for that recipe. Its so good. I've made a little tweak to it that you might like. I drop down to 3/4 cup of sugar and add in 3T of black berry preserves occasionally. Vanilla bean black berry ice cream. FTW.

I've made the B&J Cherry Garcia and it's slightly off from their store bought version. My wife is a fan of that variety and noticed right away that it was different. I could tell, too. It's very slight, but something is missing. If I made it a few more times, I could probably figure it out.

The best B&J ice cream recipe that I've tried that nears the store bought stuff is the Coffee Heath Bar Crunch. It's fantastic. I've made it several times.

I make a coconut cream based icecream that is very simple but tasty and great for those that are lactose intolerant.

14oz can of coconut cream (not the milk)
pinch of salt
1/2cup of sugar
1 tspn vanilla

Toss in icecream maker and enjoy.
