Making a full backup of a drive minus one directory

I have Acronis True Image 10. It's awesome backup software. I have Windows Vista x64. True Image was able to clone my entire 500GB RAID-0 array to my new 750GB hard drive. I want to create another backup to a much smaller 120GB drive. I can fit this on there without one particular directory, my games directory. My C:\Games\ directory is 370GB in size. Without that directory all I would need to backup is about 35GB worth of stuff. I want to make it so if I restore that backup to the 120GB drive I can boot off of it. It would be like my 500GB array or my 750GB drive minus the huge games directory. How can I do this?
 
I don't think you can. You have to move the games first elsewhere, do the OS backup.
You can try selecting all but games folder + MBR and Boot. I don't remember if true image allows doing so...
 
Copying the games directory to somewhere else first was what I was hoping to avoid. Oh, well... I'll do it later I suppose. If I ever need to restore from a backup I still have the two 250GB drives with all my data still on them. The only problem is if I get a new non nVidia motherboard in the future I won't be able to read the array.
