think you could put several propane burners in 1 grill, then put a stone or unglazed tile for the cooking surface for a make shift ny style pizza cooker?

1 good burner should be enough to heat a stone. It will not work well unless you can keep the heat pretty constant in the space above the pizza. Using a BBQ grill will most likely lead to a pizza that is cooked on the bottom and probably not so cooked on top. This is why ovens are front load as it holds a majority of the heated air in when you open the door.

Unglazed quarry tiles should do the job. If you pre-heat, you won't need more than one burner unless you can't get the interior temp hot enough (500F+ depending on pizza style).
