mailing html forms using cgi?

i usually use my cold fusion server to send/ process forms. i was wondering whether there's any way to use the cgi-bin features of my website to email the values in an html form to an email address? like i want to specify the server, username and email address to mail it to, and have some page which says thanks.

pleaes le me know how this is possible.

The NMS Formmail is usually regarded as one of the best send to mail forms - its a drop in replacement which fixes many of the security issues with the popular Matts Script Archive version. I use it on my site here
