Mail.app

You can export individual Mailboxes, which is how Mail.app views every folder.

You just right click on the Sent Folder, and then choose Archive Mailbox. It'll then prompt you for a place to save those items.
 
Go into Settings/Accounts, and then go to "Mailbox Behaviors" for the mailboxes that you'd like to keep all messages, and make sure that "Delete sent message when:" is set to "Never"
