I made a delicious Vietnamese dish for dinner, so I thought I would share it on ATOT.

Fried and sauté wide rice noodles with beef and shrimp.

That looks good. Are the greens choy sum? Looks a little smaller than bok choy.

I eat tons of that. Well, maybe not tons, but I do like bok choy a lot.

What'd you make the sauce with?

Black Bean Sauce, Oyster Sauce, Hoisin Sauce, and Soy Sauce, with a small amount of corn starch added.

You can't see it I think, but I have mushrooms in there too. Normally it would have bean mung bean sprouts, but I don't like them.

hmm looks like im missing out on a lot of vietnamese dishes. all i ever order is pho. 1 time i ordered bun bo huey, was fuckin delicious but I dare not ask what it was made of. looked like blood...

I believe this dish is similar to chow fun, except the difference is chow fun is stir fried, while this is fried and sauté. In Vietnamese it is called Pho Ap Chao.

I had some pho tonight. Beef balls, rare beef, beef brisket, beef tendon, and tripe. Extra hot sauce, thai basil, rice noodles, some hot peppers, and lime to top it off.

Om nom nom.

Yum. My favorite pho combo as well. I prefer the rau ram to thai basil though, along with a little hoisin sauce.

i like baby bok choy. been cooking the fuck out of those, lately.

It's not really authentic Viet dish until you have dog meats in it. Go for the brisket cut, that will bring the flavors out.

No vinegar in my dish.

Here is how I made it:

Ingredients:

Meat:
1/4 lbs. of beef skirt sliced to small pieces.
1/4 lbs. of shrimp peeled and deveined.

Marinade:
1/2 tbsp. of oyster sauce
1 Tbsp. of soy sauce
1/2 Tbsp. of black bean sauce
1 Tbsp. of hoisin sauce
1 Tbsp. of corn starch
1 tsp. of sugar
1 tsp. of black pepper
2 cloves of chopped garlic.

Other:
1 large green onion chopped.
1/2 of oyster mushrooms sliced
2 cups of baby bok choy cleaned.
1 packet of fresh chow fun noodles.


Steps:

1. Mix together the sauces, corn starch, sugar, garlic, and pepper. Use half to marinade the beef and half the shrimp and set aside.

2. Separate the noodles strands, and set aside in a bowl or plate.

3. In a wok heat around 3 or 4 inches of peanut oil until it is very hot.

4. Take a handful of noodles and drop it in the oil, and let it fry for 30 seconds. Flip the noodles over in the oil and fry for another 30 seconds. Remove from oil and repeat until all of the noodles are fried. You should wait a few seconds after each one to allow the oil to remain very hot.

5. Remove the remaining oil from the wok and return to high heat. When wok is very hot sauté beef and shrimp until around 3/4 of the way done, add in veggies and mushroom and sauté veggies until they are around 90% done. Add in fried noodles and GENTLY sauté the noodles with the rest of the ingredients for 1 or 2 minutes. Be careful not the break the noodles up.

6. Plate

This should be enough for 2 or 3 meals. You can add what veggies you want really, and the marinade can be modified to fit what you would like too.
