The enemy AI doesn't seem too intelligent in that last GIF. If I had to guess, it's using an AC/Batman style combat system (counter, counter, and more counter!). Although, to be fair, I don't know what difficulty the footage was recorded on. I would imagine they'd put it on an easy to moderate difficulty to capture good footage.

I don't think it's rushed, they had a teaser trailer for the game way back at the official PS4 unveiling even before pre-orders for the console went up. That was 2 years ago.
