i took apart a G4 today and a saw an intel chip on the bottom of the board and assumed it was the chipset
so why are they just now moving to intel CPU's?
The People at Apple/Macintosh have traditionally wanted to control both their Operating System and sell and produce their own hardware. They have tried to hold on to this through the years. They sometimes buy processors from different sources for different products like Networking, Wireless Networking, chipsets, Modems, sound devices, etc.
Lots and lots of companies use various Intel chips for lots and lots of products.
I have a Sun quad-ethernet card lying right next to me, and it's got an Intel bridge chip on it.
CPU's and chipsets aside, Intel makes alot of other chips for all kinds of applications.
