Mac Mini as a server with Windows 2003 VM in Parallels

Hey everyone.

What I want to do with my network is get a Mac Mini, install Parallels/Windows 2003, and set up AD/ASP.NET Webserver.

I would like all 3 of my computers to connection to the domain (Windows 2003), and backup files from each client, say my My Documents folder or the usr folder in Ubuntu.

This I would like to do via Time Machine to a external 500 GB hard drive in Leopard.

Does this sound feasible? I love time machine, it's convenient.

My network is

Macbook - Leopard 10.5
PC - Windows XP
PC - Ubuntu

Basically I want Windows 2003 to grab data from all the computers and copy it to a folder on the Leopard side of the computer, then my external hard drive to back that data up.

 
That seems like overkill, it would be much simpler to just use something like rsync on OS X to do the network copy from both other machines.
