Yes, Sauron NEVER appears in the books or movies during the third age. But if you look at the special features listing there is a feature called "Abandoned Concept: Aragorn battles Sauron" - so they at least considered it at one point, but thank god they never followed through with it, just like they abandoned Arwen at Helm's Deep.
