I'm getting more into bird watching and my cheap stuff isn't cutting it. My pops has a really nice canon/nikon set that cost like 1500 bucks 20 years ago and they are still going strong.

They had some kind of gyroscope in them that would lock or "float" the image so there was little to no shake. There was a button you pushed to actuate it.

So where should I be looking for really good binoculars with high quality optics?

check out the binocular forum of cloudynights.com. It's an astronomy forum, but they got some really knowledgeable people there.

What is your "cheap stuff" and what kind of magnification and objective size are you looking for? I have a set of Bushnell Trophy 10x42 binocs that for the price I paid are great, and you can mount them on a tripod/monopod if you so desire to help with image stabilization (may require an adapter for that, don't recall).
