Well, why not one of the two you listed above? :p VPC has a 45-day free trial from MS - get it, try it out, and buy it if it fits the bill. :)

I've only used VMWare. It runs $189 for a single workstation license, but it's widely considered the industry standard for virtual PC software. You can also download a fully functional 30-day evaluation copy.
