I like tomatoey chili with no beans - hot to taste - I like to dip crackers and eat it with a block of cheese - and I like cubed beef in my chili. Problem is I don't have a recipe and the person that used to cook this for me is dead. . .

HELP!

Chili isn't hard to make without recepies. Learn to make the base and put in your own additions to master the taste.

Talking about dead people and chili eminds me of that episode of south park where Cartman makes Scott Tenorman eat his dead parents in a bowl of chili! "Yessssss!!!! Tears of unfathomable sorrow!"

1 lb Beef, ground or turkey
1 Garlic -- minced
1 lg Onion -- finely chopped
1 md Green pepper -- finely
-chopped ( about 2/3 cup)
4 tb Chili powder
1 tb Cider vinegar
1/4 ts Allspice
1/4 ts Coriander
1 t Cumin
1/2 ts Salt, or to taste
1/2 c Water
1 cn (16 oz) canned crushed
-tomatoes
1 cn 16 oz can red kidney beans
-with liquid.
1/4 c Corn, frozen or leftover, or
Canned

Cook beef, garlic, onion and green pepper in a heavy
Skillet over medium high heat, stirring frequently to
break up meat. Cook until onion is soft and meat has
last its pink color. Add remaining ingredients.
Bring to a boil, cover and reduce heat. Simmer the
chili for 45 mins, stirring frequently.

Double the beef, substitute cubed beef, leave out the beans.

I double the chili powder, add a 1/2 tsp coco, a 1/4 tsp of cinnamon, 1 teaspoon of cayanne pepper, a cup of strong coffee or beer, and a cube of beef bullion.

Delicious - I made it tonight. It was a little different - and much more watery. I'm thinking it needs to be thickened somehow - probably some flour? I used the coffee and all the optional stuff. I could not find corriander in the stores here :p. . . so that wasn't in there. I think I'd do two teaspoons of cayenne too - but this was 'pretty good'

The best way to thicken it is 24-72 hours on low heat in a crock-pot (slow-cooker).

I made some just last week, pretty similar to moose's recipe, but with brown and black beans as well. It was sooo good:)
