If quality and simplicity are your primary concerns I always recommend a Nokia.
The problem is most of my experience is with phones no longer available. And the newest generation isnt all that hot, from my personal experience anyway.
I got a 6301 recently, (and did a review too), and while it was good in many ways it had some serious flaws like a relatively weak battery. Other Nokias have been much stronger.
Also, you wanted a flip phone and Nokia doesnt make too many of those. What they do have varies in quality greatly.

Dont let the 68% fool you. These guys are brutal in their reviews and thats actually a very good score. Their absolute favorite phone ever is the 2nd gen N95 and it only gets an 81%, I think.

The next clamshell in line only gets a 50%, so you can see that Nokia flip phones arent considered the greatest.
My 6301 is even further down the line at 49%.
And theres a BUTTLOAD of phones below that. These guys are hardcore gadget freaks and most phones just arent good enough in their eyes.
Even though they said the 6650 is a relatively basic model they rated it well, which just goes to show how nice it really is.
If you ignore the Nokia brand, but insist on having a flip phone, the best one is the Blackberry 8220 Flip, at 71%.

So it seems they give the best scores to bars and sliders with lots of features that work well.
If build quality is important I could also recommend a rugged phone from Nextel. They tend to be put together a lot better than other phones.
The problem is if you get one with a nice camera that puts it in the Rugged/Multimedia catergory, and most of those tend to have relatively poor battery life.
I got a Motorola i580 and I had that problem. (Also did a review on it.)

The i880 got a fairly good score for a Nextel phone. They also commented that it looked much nicer than most other rugged models.

So I guess its a personal choice. The Adventure v750 looks much nicer and has a better RAZR-type setup, but its not as tough as the i880 or i580, which can be dunked in a pool of water.
The v750 is also MUCH less bulky, which would fit another of your requirements.
