You can use DVDDecrypter to output just the audio stream and then convert that to something usable, like WAV or MP3.
I'm pretty sure there are other programs that do this as well. Search for DVD Audio ripper or something like that. Also, take a look at http://www.videohelp.com
For the record I use DVD Audio Extractor and find it great. I often rip a concert DVD down to CD to listen to in the car. This will rip as one large audio file or it will auto-detect breaks in play and create individual tracks.
