I was making my usual 'exotic salad' - a dish I made up using portebello mushrooms, tomatoes, carrots, artichoke hearts, capers, olives, etc.. Usually it involves one exotic meat and one exotic cheese. I normally use feta or blue cheese..

But, this time I saw Limburger cheese was available so I got it. I also got a backup cheese (goat cheese). All I can say is 'thank god I got a backup cheese.'

Wow.. Limburger smells like dead animals. It's hard to believe one can eat it. I thought it was gross - but my girlfriend thought it was absolutely horrible. Since I never waste any foods, I've gotta find a recipe for the rest of it. I was thinking of the typical Limburger onion dip - mixing it with diced onions, paprika, etc..

Anyway.. what are your experiences with Limburger? Any good recipes?

EDIT: I decided to try a tiny amount (maybe 1/16th oz) of Limburger on a slice of bread with some Black Forrest Ham (very flavorful salty ham) and some Jamaican habanero hot sauce. I swear.. all I tasted was the Limburger. I feel like I just ate the following:

- locker room after a big game
- cat's breath & some litter box
- dead human body
- dead rotting fish
- a pinch of 'trash bin consisting of mostly old food'

So.. I have about another 4oz of Limburger to eat. I will not let it go to waste. What's a good recipe? There's gotta be one....

I want recipes...

OMG.. I wrapped the cheese in some foil and put it in a ziplock bag. When I open my fridge door... BOOM HOLY FVCK wow..

I threw away a tiny bit of the cheese wrapper in my kitchen trash and my entire apartment smells like Limburger.. Damn.. my roomates will be really mad.

there is no "recipe" for limburger. you eat it with mustard and crackers.
