Local Backup for a Rack-Mounted Server?

I have a server that I need daily backups made on. I have an Iomega REV (35GB) and was wondering if I could somehow use it to make these daily backups that I need. I am not familiar with the OS and have not been able to get inside of it. Can someone tell me what my options are and any questions that I need to answer to get some suggestions?
