Linux/Webmasters/SYSadmins Question: Dealing with DNS changes with mail server

ok, here is the situation. We have our web and mail being hosted one one machine at an ISP colo....
They both share the same IP address

I want to take just the web portion of it, and host it at another host that has more capabilities....

I have about 150 mail users, and if I lose mail in the process, my head is chopped off basically...

So I talked to the host that I want to host the website with, and he said it would not be a problem, they would just
issue the DNS change say on a thursday, then something about an MX RECORD, that would forward all pop/smtp requests to the old box..

what do you guys think? can it be done?

Yes. All they'll do is update the authoritative DNS for yourdomain.com to reflect:
A record for (www.yourdomain.com) = IP addy of new server.
MX record for (yourdomain.com) = IP addy of existing server.

Make sure both the mail server at your old and new place are working at the same time, because the DNS updates won't propagate across the web at exactly the same time. Some places will cache the DNS files so you'll have some mail delievered to your old server and some delievered to the new server. This in itself could be a pain in the butt, but it's better than losing any important email.
