Debian is a good choice. Installation is a bit more difficult than other Linuxes, but after that, it's EXTREMELY easy. Altrough the "Stable" tree of Debian is somewhat old. Unstable is new and current but it can be (surprise surpise) unstable.

You might want to look in to SuSE or Red Hat. Mandrake is good for newbies and/or as a desktop OS, but since you would use it primarily as a server, I would steer clear of it. I would recommend SuSE, it has the best manuals of any Linux-distro!

EDIT: SuSE doesn't have downloadable ISO available though. So maybe Red Hat?

Another vote for Red Hat... Just beware. I heard some things about an apache security hole last year... I run IIS so I'm not sure what the deal with Apache is straight up, but I think it was something that pretty much hosed the server up...be sure to read up on it. As far as Red Hat goes, I was able to pickup a copy of 6.2 Deluxe @ Office Depot last year for $14. I snatched it up and it was a pretty sweet package with all the extra free apps. I'm sure you could find a similar deal somewhere out there, but you may wanna go with 7 and up... Just remember to balance your version to your server's capabilities. Don't throw version 7 on a 486 and expect it to run fast with a gui. Good luck on finding a solution that fits your needs!
