use CUPS.. it is da-bomb when it comes printing... Most distros have it as a package or something. It's what mac OS 10.2.+ uses, so you know it's does good quality. I used it once in Linux for what I had this ancient printer. I needed to use it to print out resumes for a job search, cups did a hundred times better job than windows did, but I suppose your milage will vary. BTW epson does activily supports cups drivers.
The drivers are all in the form of .ppd files.

(If anybody is using mac os 10.2 or above, try typing in 127.0.0.1:631 into your browser)

CUPS should support your printer, because it working status rating is perfect, however you could also try Ghostscript.

CUPS EPSON Stylus Color/Photo driver work perfectly for my old Stylus 660 & 760.
