Linux distro for Intel Xserve

I have a few of these that I was going to recycle, but then thought about installing linux on one. I haven't paid attention to Linux in awhile, so I'm not sure what distro people are using for these machines. Initially I would probably use it for a test file server, and use the old Xserve Raids. I assuming a lot of people were doing this with these machines, but there seems to be little interest.
